Chris and I stayed up late last night after the kids had gone to bed making my favorite fruitcake recipe. It is a very boozy (and high altitude friendly) adaptation of this one over at Allrecipes. I always forget how long it takes to bake though.. we started at 10pm but the large loaves need about 2-3 hours in the oven to finish.
Let me tell you about this cake. The fruit is plump and juicy, the bread is moist and rich in spices, and it is slowly loved for weeks into a huge brick of boozy holiday goodness that is perfect for gifting.
I have learned the hard way over the years to make a double batch if there is going to be any left over at Christmas time for gifting. Somehow most of what is made always mysteriously disapears before the holidays properly arrive.. a very curious problem to be sure!
